Flounder or fluke. Side swimming flatfish. In the United States, fish labelled as sole is usually flounder. However, fish labelled as flounder can be better than flounder in Europe.
A small, golden yellow variety of hard eating apple known in England since before 1800. This early-season apple is harvested from late August in South-East England and has poor storage properties.
Summer cep or bolete mushroom. A round, brown-capped mushroom with nutty flavour.
Autumn Pearmain. A variety of russet eating apple with red flushing which may have been around since the late 1500s. It is a mid-season apple, harvested from late September in South-East England, and does not have great keeping properties.
A traditional British dessert made with slightly stale white bread, used to line a pudding basin, which is then crammed full with berry fruits such as raspberries, blackberries, redcurrants and blackcurrants. I sometimes add blueberries, which is hardly traditional. The pudding is then weighted and chilled overnight and turned out when required. Delicious with a good home made custard, also served cold.
Unlike winter purslane, which is hardy, summer purslane is half hardy. It is a low growing plant which produces slightly succulent leaves that are used in salads. The green-leaved variety has better flavour while the yellow-leaved variety is more decorative.
Summer savoury is an annual herb. In Canada this is used often where sage might be used elsewhere. In France it is famously used in cooking young broad beans. It is slightly less bitter than winter savory, which is a perennial.
Summer spinach is simply spinach, may be a special variety, which puts out its leaves in summer. Leaves can be rather large and floppy, so select the smaller ones for salads, and the larger ones for cooking.
