Throughout the world a rolling pin is used for rolling out doughs, pastry and breads to a required shape. In India the rolling pin is a fine, slightly tapering stick, used for rolling out the many flatbreads, while in the West rolling pins are generally more solid affairs. They may be made of marble, porcelain or metal but are generally wooden, which works well with dough.
Salt herring, soaked and then rolled around a stuffing of onion, dill and peppercorns, with a dressing of vinegar, sugar and tomato or chilli.
