Blue crab. A mottled blue crab about 20 cm (8 inches) across, with blue claws. The blue crab is eaten as soft-shelled crab in North America. We once gathered with friends around a table at Obrickis in Baltimore, with a heap of blue soft-shelled crabs piled onto the paper tablecloth and a collection of hammers. The flavours and the general chaos were wonderful.
Butterfish. A slippery, shimmering, silver seafish with rich, soft white flesh. It is found off the Atlantic coast of the United States, where these were caught. It is good grilled or fried and may be smoked. Fish for market weighs up to 200 g (7 oz).
Wolf-fish. Marine catfish. A fish of northern waters. It is medium oily and white-fleshed. Since it eats shellfish, its own flavour is good. Its jaws are strong and it has a blunt head which lend to its unattractive appearance and which is why it is normally sold filleted or in cutlets. It has few small bones and can be used in the same way as monkfish (US: angler fish), in stews or grilled. It is sometimes sold as rock salmon or rock turbot.
Non-specific clams found along the eastern seaboard of North America.
