Little pots of tiny, brown shrimps packed in melted butter with nutmeg and then set. Famously, those from Morecambe Bay are considered the best.
A variety of green cooking apple with a light pink blush raised by Mr Samuel Potts at Ashton-under-Lyme in Lancashire around 1849 and introduced commercially by Mr John Nelson of Rotherham. It cooks to a frothy purée. This early-season apple is harvested from August in South-East England and has poor storage properties.
Pound cake is so named because the 4 oz of flour, 4 oz sugar, 4 oz butter, 4 oz eggs (2 eggs) add up to 1 lb. The French call it quatre-quarts and the Spanish cuatro cuartos for the similar reason that there are four separate ingredients each of the same weight, 4 x 4, each weighing 100 g.

The pout(ing) or bib is a coastal fish, similar to poor cod, shaped like an elongated triangle with a copper-coloured back and silvery sides and belly. It is about 20-30 cm (8-12 inches) long. It has a short barbel on its lower jaw, long thin pelvic fins and two abdominal fins connected by a membrane, The flesh is lean, but rather flavourless and has many bones. It deteriorates rapidly, and so should be prepared very quickly.
A name on Loch Lomond for the houting. This is a small relation of char or lake whitefish and is a slightly oily freshwater fish of northern Europe, prepared in the same way as trout. It can be baked or fried.
The powdery brittlegill is a variety of wild mushroom, ranging in colour from blue to light green or grey. Most brittlegills resemble other ones that are inedible and some will cause gastric problems. You can normally detect what type it is by the flavour. A tiny tasting will immediately reveal whether or not it is edible, but it is worth spitting it out immediately if you detect a bitter taste. (If gathering mushrooms you must be absolutely certain what you have before you eat them as many are very poisonous.)
A small variety of russet eating apple known in Somerset since the 1700s and probab;y identical to King Charles Pearmain. This late-season variety is harvested from early October in South-East England and is at is best from December to June.
A variety of buffalo fish, a sweet, white, lean freshwater fish; a type of sucker with dark brown skin. It is similar to carp and very versatile and plentiful in the Great Lakes and Mississippi valley.
