A firm, raw goat's milk cheese with small holes made at Timsbury, which I used to be able to see from the flat I lived at in Bristol. The church stood on the brow of the hill which lay south of Bedminster. There was also a pub there which smoked its own meats, and snails too. This cheese is formed in a plastic mould which leaves impressions in the oiled rind.
