A hard cow's milk cheese made from raw milk and flavoured with ale and whole grain mustard seeds. There are two varieties, Meldon and Belston.
Yellow sweet clover, bird's foot trefoil. A leguminous plant the leaves and flowers of which, when dried, have a pleasant aroma. This delicate herb is high in carotene and vitamin C. In order to preserve its fragrance, it should never be more than briefly parboiled. Can be used in marinades, for flavouring sausages, in salads, custard dishes and clear soups to add aroma. It can be used to stuff rabbit. In Switzerland, it is used to make herbal tea. Some cheeses, notably the German cow’s milk Schabzieger and curd cheese, Gruyère and green cheese are flavoured with the yellow flowers.
The word 'melon' generally refers to any of the musk or canteloup melons but may also refer to watermelons.
A kitchen implement with a wooden handle with a small sharp edged bowl at one end. This is used to scoop ball shapes from, particularly, melons but can also be used for other similarly textured foods such as cucumber. Larger ones are used for ice cream.
Pepino is a Spanish word for cucumber, which is confusing. However, the pepino or melon pear is a cream coloured, melon-like fruit with purple splashes, but less sweet. It can be refreshing but may also be bitter. It is a good addition to bulk up a fruit salad, adding an interesting, if mild, flavour.
Bailer shell. A type of sea snail with a large, smooth brown or cream shell with zig zag stripes, containing an animal which has no operculum on its foot. It is found all round the coasts of tropical Australia but it is illegal to trap it in some areas. It is very similar to the bailer shell, only differing from it in having spines at the posterior end.
