mallow

Mild tasting young mallow leaves may be used in herbal infusions or make a very good substitute for lettuce, whereas older leaves are better cooked as a leafy green vegetable. The flowers can be used in salads.

Malpeque oyster

Atlantic rock oyster. A variety of oyster up to 15 cm (6") in length found on the American side of the Atlantic. Unlike many oysters this is usually cooked, served on the half shell. This is because it is quite a fatty oyster, particularly when large, which is improved by cooking. All down the eastern seaboard the Atlantic oyster is called after the area in which it is found, e.g. the Long Island oyster, Chesapeake Bay oysters and so on. The best known is probably the bluepoint.

Maltesers, chocolate-coated balls of malted honeycomb, were developed by Forrest Mars who also invented the Mars bar. His father, Frank Mars had patented the Milky Way in the United States. Forrest Mars also invented the Snickers bar and M&Ms.

Maltster apple

A variety of juicy, yellow, all-purpose apple streaked with red, which probably arose in Nottinghamshire some time before 1830. This mid-season variety is harvested from late September in South-East England and is at its best from September to October.

malt vinegar

Malt vinegar is made from unhopped beer, ie barley. It is naturally clear, in which case it is called light malt vinegar, but is commonly seen with added caramel, known as brown malt vinegar.
