The grooved carpet-shell is a variety of clam often used in the classic and wonderful spaghetti alla vongole and is the ‘vongole vera’ of the dish.

Grouse are small game birds the best of which is the red grouse, indigenous to Britain and Ireland. They will only need to hang for a day or two. They are usually roasted quite fast until pink and commonly served with watercress, bread sauce and gravy. They should not be overcooked. They are shot on heather moors from 12th August, the Glorious Twelfth, until 10th December, and are generally hung for 2-4 days.
An oval soft cheese made with cow's milk. It is rolled in pinhead oatmeal and cracked pepper and is made by Highland Fine Cheeses.This cheese is made with pasteurised, whole milk with vegetable rennet so is suitable for vegetarians. It may be found weighing 125 g (5 oz). Affinage is just a few days.
