Coral is the name given to the corak-coloured egg sac of shellfish, particularly scallops, crayfish and lobsters. They are either eaten in their own right, as with scallops, or may be used to flavour and colour sauces. They can be seen when you open the animals and, to my undying surprise, are often discarded without being eaten.

The coral fungus is so-called because it looks for all the world like something you would find on the Great Barrier Reef. Found from summer to autumn. (If gathering mushrooms you must be absolutely certain what you have before you eat them as many are very poisonous.)

coral trout

Coral trout is a deep coral pink grouper which makes for good eating. The flesh is sweet, firm and, surprisingly, milky white, like a cross between sea bass and turbot. Very good catch!
