Coral is the name given to the corak-coloured egg sac of shellfish, particularly scallops, crayfish and lobsters. They are either eaten in their own right, as with scallops, or may be used to flavour and colour sauces. They can be seen when you open the animals and, to my undying surprise, are often discarded without being eaten.
