American Asiago

[English]

A semisoft cheese made with cow's milk, sometimes similar to Provolone. It has a rubbery, spongy paste and a smooth rind. The quality varies depending on the producers in North America. This cheese is eaten all year round and is made with raw, skimmed milk and contains 45% fat (dry), 29% fat (total). The curds are cooked and pressed. Affinage is from 3-5 months. It has a piquant, penetrating flavour but no smell.

American Banon

A small, round cheese of sheep’s, goat’s or cow’s milk, wrapped in chestnut leaves, steeped in brandy and tied up with raffia. With its sweet, nutty flavour and white paste it is at its best from May to November. It is made by Capriole farms in Indiana.

American beach plum

Small plums grown in North America. They grow in sandy soils along the Atlantic coast. Their skins vary from red to yellow or purple and they have a tart flavour. Generally used for preserves.

American Beauty

A cocktail consisting of 22 ml (¾ fl oz) brandy, 22 ml (¾ fl oz) dry vermouth, 22 ml (¾ fl oz) orange juice, 7.5 ml (¼ fl oz) white crème de menthe or peppermint schnapps, dash of grenadine, 30 ml (1 fl oz) port. Shake all ingredients except port with ice. Strain into and Old Fashioned or cocktail glass. Tilt the glass and slowly add the port so that it floats on top.

American bison

American buffalo. American bison. The deep red, coarse meat is mild with a sweet flavour. The cuts are similar to those of beef but because the meat is so lean, it is worth cooking very slowly and for a long time.

American breakfast

Breakfast including juice, eggs, bacon, sausages or ham or other meat, toasts or pastries and coffee. On occasions, grits, pancakes, hash browns or cereal may also be included.

American Brick

A brick of semisoft cheese made with cow's milk invented in Wisconsin in 1875. It has an elastic, yellow paste with some holes and a reddish, brine washed rind. When young it has a mild, earthy flavour but, as it ages, it becomes like a cross between Limburger and Cheddar and is sweet and slightly nutty. It slices well so it is mostly used for sandwiches, canapés, cheese burgers etc. It is called Brick because of the shape of the presses used in its manufacture as well as because of its own eventual shape. It contains 45% fat (dry). Some say it is similar to St-Paulin.

American broccoli

A broccoli-like vegetable with large, densely packed, usually blue green heads and few outer leaves, originally from Calabria. It may be white, green or purple. Sprouting broccolis have masses of small florets growing over a long season, while calabrese is a summer vegetable with a heavy central head. Calabrese, as well as broccoli, can be deep purple, lime green or white. The prettiest are the "Romanesco" types.

American brown ale

An alcoholic drink brewed from caramelised malt and hops with a strong bittersweet flavour. It is a top fermented beer, with a dark brown colour in comparison with pale ale.

American brown shrimp

Large prawns related to king prawns, up to 15 cm (6 inches) in length, fished south of the Carolinas. They come in brown, pink and white.
