Canadian bacon

Long back bacon, thinly sliced for grilling or frying; short back is the best cut for rashers; back and ribs make good joints for boiling or braising and lean rashers for grilling or frying; top back is good for boiling or braising, and also makes good lean rashers. In Canada it is called back bacon. Canadian bacon is not imported from Canada but refers to boned loin of pork which has been sugar-cured and then smoked.

Canadian lake char

Lake trout. A freshwater char living mainly in lakes in northern North America. As in Europe, this char is not a common fish. Lake trout were fished commercially in the Great Lakes until lampreys, overharvest and pollution severely reduced the stocks. Commercial fisheries still exist in some areas of the Great Lakes and smaller lakes in northern Canada.

Canadian plaice

A large flat fish or flounder similar to the European plaice, with reddish to grey-brown skin. The red spots are less well defined.

Candied peel is the peel of citrus fruits such as oranges, lemons and citrons, boiled until softened, coated in syrup for a couple of days and then the sryup cooked off. The peels can be used as they are but may be rather sticky, or can be dried over a period of several days on a rack placed in a warm dry place. Once dried they can be cut up into dainty pieces with scissors. Candied fruits are whole fruits carefully treated in the same way.
