Candied peel is the peel of citrus fruits such as oranges, lemons and citrons, boiled until softened, coated in syrup for a couple of days and then the sryup cooked off. The peels can be used as they are but may be rather sticky, or can be dried over a period of several days on a rack placed in a warm dry place. Once dried they can be cut up into dainty pieces with scissors. Candied fruits are whole fruits carefully treated in the same way.
