A method used in Cajun cooking for meats and fish. The food is rubbed with cajun spices and placed on a very hot skillet until blackened.

black eyed bean

The black eyed bean or pea is a variety of cowpea, the seed of the yard long bean. Small, cream-coloured and creamy-flavoured roundish beans with a black scar or hilum, a line where they are joined to the pod. This is described as an "eye". Black eyed peas are thought to have been brought to the United States with the African slave trade and were originally used for fodder. They are used in the southern United States with rice and are indispensable in Hoppin' John. In Nigeria they are used to make accra, or bean cakes, a dish also found in the Caribbean. In the United Kingdom this describes a slightly different bean, Vigna catjang.

Blackfaced Highland sheep

An ancient, but not necessarily rare breed of Scottish sheep, bred traditionally on Scottish hills so that the meat has good flavour. The Blackface breed is the most numerous breed in Britain accounting for over three million ewes, representing 16% of the British pure-bred ewe flock. The vast majority are found in Scotland. They are versatile, adaptable and hardy. They are good milkers and produce low-fat meat.

Blackface Norfolk Horned sheep

The Norfolk Horn is found in Norfolk, Suffolk and Cambridgeshire and is one of the ancient "Heath" breeds. The Norfolk Horn was used along with Southdown in the development of the much more prolific Suffolk breed. It is a medium sized animal with a long body and legs. The face and legs are black or dark brown and free of wool. The fleece is white with new born lambs being mottled. Both sexes are horned and the horn pattern is an open spiral. The breed was nearly extinct in 1973. The result was initially referred to as New Norfolk Horn but in 1984 the name reverted to Norfolk Horn. The breed is still endangered.
