Sablefish. A fish, in fact not a cod, from the northern Pacific. It is slightly rounded with soft, white flesh and a mild flavour. It is often available smoked, it is sold both fresh and preserved.
Black coffee is coffee containing no milk. This may be a cup of stonkingly concentrated coffee to put hairson your chest, or a long Americano-style coffee.

The black croaker is a variety of croaker or drum fish. A deep-bodied seawater fish which can be cooked in many ways. Croakers or drums are so named because of the croaking and drumming which accompanies their mating. It is the white sea bass of Californian waters. It is no relative of the sea bass of the eastern Atlantic but is a croaker or drum fish. The body of the white sea bass is elongate, and somewhat compressed. The head is pointed and slightly compressed. The mouth is large, with a row of small teeth in the roof, while the lower jaw is slightly projected. It is bluish to grey above, with dark speckling, becoming silver below. The white sea bass is closely related to the California corbina, but is the only California member of the croaker family to exceed 9 kg (20 lbs) in weight. White seabass are the largest members of the croaker family on the U. S. Pacific coast, reaching a maximum recorded length of 1.5 m (5 ft), 41 kg (90 lbs) and twenty years in age.
An oval soft cheese made with cow's milk. It is rolled in pinhead oatmeal and cracked pepper and is made by Highland Fine Cheeses.This cheese is made with pasteurised, whole milk with vegetable rennet so is suitable for vegetarians. It may be found weighing 125 g (5 oz). Affinage is just a few days.
Black cumin or nigella is type of cumin with very dark seeds and a slightly sweeter aroma than the more regular cumin. It is used in northern Indian and Iranian cooking. The name is sometimes used to describe the black seeds of nigella or love-in-a-mist but they actually derive from this umbelliferous plant. They have a sharp, pungent flavour, with a hint of a smell of strawberries and are used for flavouring confectionary and liquors.
Black cumin seeds should be fried before using for seasoning, when they impart a nutty flavour.
