A sweet, yellow variety of apple which cooks and eats well. It possibly arose in Worcestershire and is first recorded in 1854. It is a late-season apple, harvested from late September in South-East England and is at its best from October to December. Retains its shape when it is cooked so is good for pies and tarts.
A soft cow's milk cheese from Cheshire. It is also available smoked. Bexton cheese is handmade and waxed in a farmhouse in Knutsford.
Buddha rice is a vegetarian dish honored by all Vietnamese and is eaten on certain days of the month that have religious significance and during the moon's full phase. It is rice cooked with coconut milk, ginger and soy sauce, this is a vegetarian dish served on high days and holidays.
Pout or bib. A coastal fish, similar to poor cod, shaped like an elongated triangle with a copper-coloured back and silvery sides and belly. It is about 20-30 cm (8-12 inches) long. It has a short barbel on its lower jaw, long thin pelvic fins and two abdominal fins connected by a membrane, The flesh is lean, but rather flavourless and has many bones. It deteriorates rapidly, and so should be prepared very quickly.
A very fine, small variety of soft lettuce but slightly crisper and smaller leaves than those of the Boston lettuce, which is the other most well known butterhead lettuce.
