The vertebrae and first six rib bones counting from the rear of the animal, cut down the centre of the back bone. The ribs are usually shortened to about 10 cm (4 inches) and the ends of them scraped before cooking. The joint is also usually skinned and chined, that is the ribs are separated from the back bone to facilitate carving. It is used to make crown roast and guard of honour.
This consists of the rib bones from about half way down its side from the backbone, and from the loin to the shoulder. It is usually roasted, fried or grilled.
The areca or betel nut is the hard nut of a palm tree. They have come to be known as betel nuts, rather than areca nuts, because these red seeds are part of the betel chew.
A very small dessert pear almost the size of a fig. It has russeted, pale yellow skin and melting white flesh. It is chiefly used as a pollinator.
Bishopswort, purple sage. A weed thought to have magical properties. The leaves and flowers can be used in an infusion to make tea.
