Edam. An ancient, semihard, ball-shaped cheese made from semi-skimmed cow's milk. It is salted, ripened and coated with red wax. I very mild cheese whose main characteristics are that it is relatively low fat (25%) and easy to slice.

Lovage seeds are used mainly in Indian cooking, and are from a plant of the caraway family. The greenish-brown seeds are a little larger than celery seeds and have a strong aroma of rather coarse thyme. Oregano can be substituted.
