Asparagus potato. A small, early crop variety of potato with a firm hard, waxy texture and an oblong shape and with a distinct nutty flavour. It is a highly prized gourmet potato in Scandinavia, Germany and Central Europe and is good for potato salads.
A salad of fine fresh asparagus steamed and, whilst still warm, tossed with a vinaigrette, cooled and served with chopped hard boiled eggs. May be served on its own as a starter or on a buffet alongside cold roast beef or prawns (US: shrimp). As a filling for sandwiches this is likely to be white asparagus in a thick cream and mayonnaise sauce.
