A meat and fish stew traditionally made with pork, freshwater fish such as shad, haricot beans (US: navy beans) and black pudding (US: blood sausage)., flavoured with cardamom.
Sea bream (US: porgy, scup). A large family of fish which includes black sea bream, bogue, Couch’s sea bream (known as red porgy in North America), dentex, gilt-headed bream . They are usually sold weighing up to 1 kg (2 lb). All have a deep, narrow body, small mouth, big eyes, quite large, tough scales, a single, spiny dorsal fin and a black spot on the shoulder. They are good to eat cooked whole, stuffed and baked or braised.
"Ass's ear." Black chanterelle or horn of plenty. A wild mushroom which should be cooked.
"Rabbit's eye." Common funnel cap mushroom. A funnel-shaped edible mushroom that grows on the ground in woods.
Judas's ear fungus, often found dried. Dried or fresh they should not be fried, as they explode, but stewed with other ingredients.
