বেসন(bhashan)

Set afloat. Major religious festivals (Durga Puja, Kali Puja, Saraswati Puja) are associated with idols made of mud and straw over a wooden framework. After the event is over, then these are floated in nearby rivers to be reclaimed by nature. With thanks to Siddharth Dasgupta.

ভাতে(bhate)

Mash or purée. A spicy, usually vegetable dish with a mashed consistency. It is often made with aubergine (US: eggplant), though not exclusively, and mustard oil, onions, tomatoes and herbs. Vegetables are often cooked while boiling rice. For instance, whole eggs, potatoes, unripe papaya and the like can be added to the rice as it is cooking. By the time the rice is cooked so are the other ingredients.

The process of cooking spice paste in small amounts of hot oil. A bhuna curry is usually dry, mild and cooked in coconut. To sauté or stir fry. This is not a Bengali word but borrowed from Urdu.

Durga Puja is Kolkata's (formerly Calcutta) largest festival, celebrating the advent of the goddess Durga. It lasts four days. Bijoya is the last day.
