Mash or purée. A spicy, usually vegetable dish with a mashed consistency. It is often made with aubergine (US: eggplant), though not exclusively, and mustard oil, onions, tomatoes and herbs. Vegetables are often cooked while boiling rice. For instance, whole eggs, potatoes, unripe papaya and the like can be added to the rice as it is cooking. By the time the rice is cooked so are the other ingredients.
