zunka

Zunka is considered the quintessential Marathi dish; not without reason since it is prepared in almost all homes across the state. Zunka and bhakri (jowar bread) is a common, daily meal in rural Maharashtra. While urban households may replace bhakri with chapati (roti), zunka still remains a favourite. Spices and green chillies are fried and then greens of some sort added and steamd. Next roasted besan (chickpea flour) and water are added bit by bit, stirring all the time. It results in a pancake-like dish similar to a pithale.
