The yam is a staple vegetable of many parts of the world. This name is, incorrectly, often given to sweet potatoes in North America and has been copied into other languages, equally erroneously. It is a root vegetable native to tropical and sub-tropical regions. The skin is usually pink, and it is long and knobbly. The flesh can be white, yellow or orange. Can be treated in the same way as a potato.
