The meat of deer or antelope. Deer which is shot in the wild in the UK has a season of July until the end of February. It is actually more complicated than that as the stag season is from 1st July to 20th October and the hinds from 21st October to 15th February. That is tomorrow as I am writing this on St Valentine's Day. Generally males and females do not live together but they do during the rut. At this time males are otherwise occupied and don’t eat, so the quality of the venison is poor. The carcasse should be well hung, for up to two weeks, to help tenderise it.
