Urda is a smooth, moist, fresh cheese with a fine crumbly texture made from unpasteurised goat or sheep's whey and sometimes flavoured with dill or other herbs. It is a dry white cheese rather similar to Ricotta, with no rind and is added to casseroles as well as desserts or pies.
