However, totano is larger than calamaro and is slightly more tough.Yet, totano is often used in place of calamaro as the two are similar in flavor, particularly when fried and in this case, totano is sliced for the large ring segments. Totano is enjoyed stuffed and baked or broiled in Italy, where the distinction between calamaro and totano is clear.
During the day, totano or flying squid, of which there are many varieties around the world, remain hidden in the depths of the water, however, at night they rise to the surface. This is why, until recently, it was uncertain whether the squid could fly or are simply "falling with style" after having leaped from the water. The decks of sea-going vessels are often found to be strewn with flying squid in the mornings. It has finally been established that totani do indeed fly by means of squirting jets of water and configuring their tentacles and wing-shaped fins to aide them in their flight with both propulsion and stabilization.
