The sweet potato is a root vegetable native to tropical and sub-tropical regions. It is long and knobbly. Young shoots and leaves may also be eaten. The skin varies from purple to red to brown, while the flesh could be white, orange, purple or yellow. It can be treated in the same way as a potato: boiled, baked, mashed, fried, made into crisps (US: potato chips).
