The spring agaric mushroom is a well flavoured edible mushroom with a large cap and meaty texture, similar to the common mushroom and growing to a Portabella type if left to mature. Ensure that it really is Agaricus bitorquis and not Agaricus xanthodermus, which is yellowish when cut and is not an edible mushroom. This is sometimes called the pavement mushroom (US: sidewalk mushroom) as it literally pushes its way through tarmac (US: hardtop). (If gathering mushrooms you must be absolutely certain what you have before you eat them as many are very poisonous.)
