sarde a beccafico

/SAHR-deh ah behk-kah-FEE-koh/koo/
[Italian]

Sardines, boned and cleaned, but the tails left on, stuffed with pine nuts, tomatoes and raisins mixed with breadcrumbs and grated cheese and then dipped in flour and egg and fried. They end up looking a little like the figpeckers after which they are named.
