Rollot

[French]

A small, round, soft cow's milk cheese from Picardy with a glossy yellow washed rind, spicy smell and flavour. It is made in small dairies. The fat content is 45%. It is known as Coeur d'Arras if suitably shaped. The name, which translates as "Royal" was given to the cheese after Louis XIV visited the village and enjoyed the cheese.
