Red Duke of York is a potato with pale yellow flesh and a vibrant reddish pink skin. It can be treated as a first early for new potato or left as a second early-maincrop and is good for roasting, making into chips (US: fries) or for mashing. They are the best of the summer potatoes for baking and have really wonderful flavour.
