Queijo Serpa

A small, strong, creamy dried goat or sheep's milk cheese, similar to Serra, from Alentejo. It is soft and runny when young but becomes harder and stronger as it ages, when it is called Serpa Velha, when it becomes salty and piquant. (PDO).
