"First salt." A type of young, fresh pecorino, sheep's milk cheese of Sicily, with a light salting giving slight savour to the taste. The paste is elastic with an oily finish and it has good melting properties for cooking. Young pecorino cheeses are quite bland and this salting is an advantage. Primo has the same route as 'premier'.
