poltiglia

/pohl-TEE'lyah/
[Italian] plural poltiglie

"Mashed." Most commonly refers to a dressing from Lazio made with mashed anchovies, red wine, olive oil and lemon and capers, sometimes with tomatoes, and thickened with breadcrumbs. It is often served with puntarelle. Poorer versions would just have mashed up greens.
