"Chicken in the style of Marengo." Jointed chicken cooked in a wine sauce with mushrooms and tomatoes, served with croƻtons, prawns (US: shrimp) or crayfish and egg. This dish was said to be offered to Napoleon after his defeat of the Austrians at Marengo, the battle for which the great mass in Tosca is sung.
