is a compound butter, in the style of the Piedmont region of Italy home of the great italian wines, Barolo, Barbera, Barbareso, and Nebbiolo. Softened, unsalted butter mixed with grated Parmesan, lemon zest and nutmeg.

Piedmont butter
(Serves 16)
Ingredients
1/2 lb unsalted butter, softened
1/2 cup Parmesan cheese, grated
zest of 1 lemon
pinch of freshly grated nutmeg
salt and white pepper to taste
Preparation
Combine all the ingredients and whip until blended. Fill container, shape, or roll up into a cylinder in parchment/wax paper approximately 1 ½ inches in diameter and chill until the cylinder keeps its shape.
