Olive tree. Olives are harvested in France from November to January during the "olivades". These are the equivalent of the vendage in the olive world. Olives to be used for oil are not picked until December. It takes 5 kg of olives to make one litre of oil. In 1956 a severe frost struck Provence and half the crop was lost.
