mostarda

/moh-STAHR-dah/
[Italian]

A relish or chutney from Sicily or the south of Italy made with grape must or prickly pear juice, with orange peel and almonds, pine nuts and raisins, cooked down like vino cotto until it has a cotognata-like consistency, like Turkish delight. In Sicily it is made in fluted metal tins. Mustard is practically not seen in the cooking of Sicily.
