A dish of aubergine (US: eggplant) sliced and fried. Sandwiches are then made from two slices with a mixture of minced (US: ground) beef, grated cheese and breadcrumbs, the whole thing dipped in egg and breadcrumbs and fried and then baked and served with tomato sauce.
