A white samoréjo. In Argentina the mazamorra is a typical porridge-like meal made with cornflour or crushed corn or wheat macerated in water overnight and boiled, during which process it is slaked with bicarbonate of soda or of a preparation called lejía, made with ash and water. Once cooled it can be mixed with milk and sugar, or with more savoury ingredients such as garlic, olive oil and vinegar and served with cooked meats.
