A tea made with unfermented leaves fro the same plant as black teas but unoxidised. This gives it a clear, golden colour and flavour, and it is very fragrant. It is served without milk and is made with water at just below boiling point. In Japan it is brewed in tiny pots to prevent it from becoming bitter as it cools.
