A process traditionally used in many of the wines of Tuscany, particularly Chianti but now losing ground. Governo indicates that the juice from semi-dried grapes or their must are added to wine that is already in the process of fermenting. This precipitates a secondary fermentation and induces a certain sherbet to the end product. Wines made using this process are referred to as "governato".
