"Silversmith's cheese." This Sicilian dish is said to have been invented by a silversmith to conceal the fact that he had no money for meat. The smell as it is cooking is positively meaty, reminiscent of rabbit. Caciocavallo cheese is fried with garlic, flavoured with vinegar, oregano and sugar. Now this dish may be made with red wine instead of vinegar.
