Winter flounder. A side-swimming flatfish. In the United States, fish labelled as sole is usually flounder. However, fish labelled as flounder can be better than flounder in Europe. Names vary in different parts of the United States, but the most common varieties are black back (winter) flounder, summer flounder (fluke), dab (yellowtail) and lemon sole.
