These are often savoury and may be filled with a mixture of Ricotta and spinach, served in tomato sauce, or filled with chopped meat such as ham and served with a cheese or béchamel sauce or any of a number of things. They may also, in Emilia-Romagna, be strips of dough fried and dusted with sugar.
