The carob bean is the fruit of a leguminous evergreen tree which grows in the eastern Mediterranean and which produces brown, leathery seed pods. The ripe seed pods contain an edible sweet gum or pulp, though the seeds are hard and inedible. The pulp is dried and ground into a powder resembling and used as a substitute for cocoa and chocolate powder.
