Bourdaloue

Tarte Bourdaloue was created at the beginning of the twentieth century by an unknown pastry chef. It was named for the street - Rue Bourdaloue - where the pastry chef's shop was located, and is also how the name of a seventeenth-century preacher, Louis Bourdaloue - for whom the street was named. It became part of culinary history.
