Fish or shellfish dish, sometimes with a whole red snapper, often including sea urchin eggs or shark, first marinated in lime juice with hot chillis, allspice and garlic and then cooked in a sauce flavoured with onion, thyme, parsley and cloves. It is usually served with white rice.
