"White food." Blancmange. Correctly, this is almond milk with gelatine chilled in a mould and then turned out. In Sicily this is usually replaced by pistachio. Possibly dates from mediaeval times or earlier. It now often refers to any kind of set pudding or custard flavoured with strawberry, chocolate or vanilla.
